What is Green Tea?

Varietals grown specifically to become green teas are processed with varying rounds of steaming, rolling and pan firing to preserve their natural "green" flavors. Green teas are greenish in color with a touch of yellow (the degree of yellow depends on the kind of green tea you are drinking).These teas have a smoky aroma that stays close to the surface of the tea. To smell green tea, you have to bring the cup right up to your nose. Green teas also have a fresh, outdoors smell like the scent of early morning mist or damp grass when it has just rained. It is a weak, grassy kind of taste that is quite persistent in your mouth and leaves a roughness on your tongue, like when you eat a raw olive.

Brewing Instructions

Green tea may be prepared in a regular teapot, a traditional steeping cup (gaiwan), or in individual teacups. Allow 1 to 2 tsp of tea leaves per cup (8oz) of water. Cover with water no hotter than 70°C, (158°F) and allow to steep for 2 to 3 min. The leaves may be resteeped 1-3 times.

The Dragon Well Story

Lung Ching is the undisputed king of Chinese green tea. Lung Ching literally means Dragon Well. It is named after the place where the tea plants are found. Originally, there were only 18 such tea plants and these were grown by an old lady who lived alone in a small village in Hangzhou. Out of kindness to the travelers who journeyed under the hot sun, she made tea from the crude leaves, free of charge. One day an old man was passing by and, on seeing her, asked what she was doing. The old lady told him she was poor, alone, and made crude tea for travelers to quench their thirst. The old man said she was not poor at all; indeed, she was very rich and had a treasure within her household. He pointed to the giant stone basin she used for grinding, which contained all her leftover tea sediments. He then offered to purchase it but the old lady told him it was not worth anything and he could take it for free. Because it was too heavy to lift, the old man said he would come back the next day with help and asked if she would keep the basin for him.

The next day when the old man came he saw only a clean stone basin, so he asked what had hap­pened. The old lady told him that she had poured the sed­iment away and cleaned the basin for him. The old man said it was now valueless as it was the residue of collected tea leaves that was the treasure. He asked the old lady where she had put the tea sediment and she replied that she had sprinkled it over her 18 tea plants and the surrounding soil, so it was not recoverable.
